Did you know? Food and Beverage Director discusses restaurants

     Each week this “Did You Know” column brings Canyon Lakers information from the many departments of the Property Owners Association – from Accounting and Community Patrol to Member Services and Operations. Even the Food and Beverage Department and the Corporate staff will provide new insights in the Association’s ongoing attempt to expand and improve communications between the Association and the membership. This week highlights the Activities Department.

     As many of you know, the Food and Beverage Department consist of the two restaurants – the Country Club and Lighthouse.
     In charge of the kitchen staff at the Country Club is Joe Scanio, who has worked for the company for about three years. Some of his responsibilities include ordering the food, taking inventory, preparing and cooking the food, controlling food portions and planning the menu for the dining room and banquets.
     The Country Club staff also supplies and delivers refreshments for the weekly and monthly meetings of the Board of Directors, ACC Department and standing committees.
     The days and hours for Golf Course restaurant are as follows: Monday through Saturday – breakfast from 6:30 a.m. to 11 a.m. and lunch from 11 a.m. to 3 p.m. On Sunday breakfast from the menu is served from 6:30 to 9:30 a.m. and brunch from 10 a.m. to 2 p.m.
     During evening hours, Monday Night Pasta is held from 5 to 8 p.m. and on Tuesday through Thursday dinner is available from the menu from 5 to 8 p.m. Friday night includes dinner and dancing from 5 to 9 p.m. with the music continuing until to 10:30.
     Saturday nights are reserved for banquets and special events.
     The Country Club can cater banquets and special events for golf tournaments, bridal showers, wedding ceremonies and receptions, baby showers, birthdays, retirement parties, installation dinners, appreciation dinners and many others.

     Heading the kitchen staff for The Lighthouse Restaurant and Lodge is Scott Sebring. His responsibilities are the same as the Country Club kitchen manager. Scott began working at the restaurant about two months ago but previously had worked at the Country Club restaurant.
     The days and hours for The Lighthouse Restaurant are Thursday evening from 5 to 9 p.m., Friday evenings from 5 to 10 p.m. including music and dancing in the bar lounge.
     On Saturday evening, dinner is served from 5 to 10 p.m. On all these nights diners can make choices from the dinner menu. Sunday Brunch is a buffet held from 10 a.m. to 2 p.m.
     There are three banquet rooms at the Lodge. The Holiday Bay Room can accommodate more than 200 people, while the Pool View Room accommodates fewer than 100 guests and the Sunset Beach Room about 50 guests.
     For a small, intimate gathering of 20 persons or less, the private dining room is a great room with a view of the water. In fact, from every room at the Lodge, there is a view of the water. In addition, there are two patios for dining.
